Your Body Will Love You For Eating This Soup

1 onion chopped
2 celery stalks sliced
2 potatoes scrubbed and dices
3/4 cup split peas rinsed
2 bay leaves
6 cups water or vegetable broth
1 zucchini diced
2 stalks of broccoli chopped
1 6oz bag pre-washed spinach
1/2 teaspoon basil
salt and pepper to taste
Place onion, celery, potato, split pea, and bay leaves in a large pot. Add water or broth and simmer until peas are tender about 45 min. Remove bay leaves. Add zucchini, broccoli, spinach, basil. Simmer until broccoli is tender about 10 min. Transfer to a blender and blend in small batches until soup is smooth and creamy. Return to pot and heat until steamy. Serve with green salad and crusty sourdough bread. Yum-Yum

Keep the recipes coming! :) I love getting new recipes to make. I am trying to incorporate more veggies into our meals, so this soup sounds great.
